How can my students and I access the CS Principles and CS Discoveries courses?

Students can access CSP or CSD units by one of two ways: either having it assigned to their section, or by manually typing in the URL at studio.code.org/s/CSP2 for example, Teachers can access all CSP/D units via typing in the URL as well. CSP/D courses don't appear initially on the list of courses available for all at studio.code.org, since they're age-locked and available only for students 13 and older. Students and teachers alike who access any CSP/D unit and complete a few puzzles within will see this course 'stick' to their list of available courses going forward.

In general, note that the course that is assigned to a section is just the first one that students will see when they log in - they can continue to access other courses at any time by visiting studio.code.org once they sign in, and you can change the course you're viewing progress in, from your 'view progress' tab by changing the dropdown list at the top to any other course, to see how your students are faring in courses other than the one assigned.
